The almond is a beautiful, medium sized tree of the rose family. It has close relations and resembles the peach, plum and apricot.
Similar to the peach, the almond consists of the edible seed, surrounded by a hard outer shell. When reaching maturity, the hull splits open. If dried, the nut can be easily separated from the shell.
The sweet delicious meat of a peach is consumed while the pit containing the peach seed is discarded. To the contrary, an almond pit is saved and the thin fibrous outer flesh is discarded. The almond pit containing the delicious edible seed inside is the nut of commerce.
The round-crowned almond tree can typically grow in heights of twenty to thirty feet. The actual wood of the tree tends to be harder and stronger than that of a peach tree and also lives longer. The bark of the tree is a dark shade of gray and the branches are wide and spreading. The borders of the sword like leaves are toothed finely.
Almonds are grouped into two primary categories: sweet and bitter. There are of course some varieties that fall in between but the sweet and bitter are the primary kinds used. The sweet almond is grown for its edible nuts. Bitter almonds are used mostly for cooking and cosmetics. The bitter oil is used as a flavoring in foods and as an ingredient in many cosmetic skin preparations. On the contrary, sweet almonds are delicious and healthful. These are also used for smoked almonds.
Originating from obscurity, the almond is believed to be native to temperate desert parts of Western Asia. Slowly, the almond spread westward to the dry and warm climates of the Mediterranean regions. The almond is not just relegated to the cultivated variety. There are over thirty wild or minor species known to man. Some botanists believe that the cultivated almond is not actually a natural species but a hybrid or prehistoric origin, descended from many of the wild species found over the warmer parts of Western Asia. The Bronze Age sites of Greece and Cyprus had been known to have the domesticated almond.
The almond has many biblical references as well. In 1700 B.C. it was common in Palestine. Almond branches are still known for the quickness with which they prematurely bloom when placed in water in a warm place. In Biblical times the Hebrews looked upon the almond tree as a symbol of haste because of its sudden blossoming. Throughout Europe during the 12 and 1300’s almonds were extremely popular and inexpensive. Almonds have symbolized good luck for many centuries in southern Europe.
Traditionally in Europe , candied almonds have been given out as tokens of good luck, long life, and happiness. In Spain the glistening ceremonial “Jordan” almond are popular. “Jordan” refers to a world renowned Spanish variety. Today Jordan almonds are used in wedding ceremonies throughout the United States.
The first plantings of edible almonds in North America were made in Spanish missions located between San Diego and Santa Barbara, California in the late part of the eighteenth century. The damp, coastal fogs and moist conditions of this region were unsuitable to growing almonds and the plantings were abandoned. Later attempts of growing almond trees in New England failed as well. It wasn’t until the 1850’s in selected areas of north-central California were recognized as suitable areas for growing almonds. Today ninety-nine percent of the almonds grown in the United States come from a 400 mile long stretch of land in California extending north from Bakersfield to Red Bluff. About 420,000 acres have been planted with almonds by over 7,000 individual growers. The most favorable areas for growing exist in the Sacramento and the San Joaquin Valleys. Almonds are California’s most important tree crop in terms of acreage, dollar value and world distribution. Today, California provides the entire needs of the domestic market and accounts for nearly half of the world’s almond productions.
The best known almond variety found in Europe is the Jordan variety. However, California has been unsuccessful in growing this variety. Over fifty percent of California almonds are the Nonpareil variety. A.T Hatch is credited with bringing this variety to California in the 1880’s. The Nonpareil’s are known for their paper thin and soft shells. The Mission variety is the next most important variety and is known for its harder shell and bitterer flavor. The Peerless, Thompson, Merced, Carmel, Ne Plus Ultra, along with the Mission and Nonpareil make up ninety percent of California’s almond acreage. The average crop yield in California is about 1,800 pounds of in-shell almonds per acre.
Spanish almond acreage is over three times that of California, but Spanish production is less than one half of California. Spain’s almonds are primarily produced on thousands of small, marginal farms located next to the Mediterranean Sea. The soil in this region is rather poor as the dray Spanish land relies heavily on natural rainfall. This difference in crop is noticeable in the shelling rates of California and Spain. California’s Nonpareil almonds shell at a rate of sixty to seventy percent The Spanish almond shell at a rate of only twenty-five percent.
Almonds do not prosper in the tropics. Humidity is high and there is lack of sufficient chilling to break the rest period of the buds. Moist weather during ripening may cause mold to develop on the shells and rancidity in the kernels.
Almond trees in California tend to bear fruit three to fours and enter into heavy production seven to eight years. Almonds respond rather well to fertilization as they are subject to several diseases that adversely affect crop yield and quality.
After the nuts are harvested they are dried to reduce moisture content in the nut to less than eight percent. For long storage almonds should be kept at temperatures of less than forty degrees Fahrenheit.
At the processing plant about ninety percent of the almond crop is shelled. They are then sold according to size, style, and grade. For example, whole, blanched, sliced, or slivered almonds. Shelled almonds can be sold in these forms or processed into various other forms such as almond butter or almond paste.
